Vegan Black Bean & Quinoa Burger

This recipe makes 16 large, delicious burgers. It’s always great to make this amount so you can freeze the patties and de-frost them when you’re craving a burger night!  

This dish was originally created for Burger Night during the 2020 retreat season at the Farm of Life in Costa Rica, and was absolutely enjoyed by many!

Ingredients

1.5 cup Quinoa dry, 3 cups cooked – can be prepared in water or veggie stock

3 cups Black Beans (dry, soaked and prepared in pressure cooker) or 7 cups cooked/canned

3 cups mushrooms of choice, diced – I like cremini for this recipe

6-8 Garlic cloves, depending on your preference 

2 medium leeks, sliced and soaked in water to rinse out dirt. Can be substituted for cooking onion if you dont have any leeks on hand.

2 red peppers, diced 

Juice of 3 limes or lemons 

3 Tbsp ground flax + 6 Tbsp warm water, let sit for 5 minutes  

 1 – 1 1/4  cup oat flour (ground from gluten free rolled oats) 

Cayenne pepper as desired

3 tbsp chili powder 

3 tbsp ground cumin 

3 tbsp paprika 

2 tsp Salt

2-3 tbsp virgin coconut oil to sautée leeks, mushrooms, etc as well as to grease the pan.

Taste mixture and add more spices, lime or salt as needed

Method

  1. Cook quinoa and black beans according to package, let cool enough to handle. 
  2. Prepare flax egg and let side for 5 minutes.
  3. Sautee chopped and cleaned leeks in oil for about 3-5 minutes on LOW to MEDIUM heat. Add minced garlic, mushrooms and red peppers and sautee for another 5 minutes. Set aside. 
  4. In a large bowl, add cooked  black beans, mash with a fork or potato masher (I like to  leave some beans whole)
  5. Then add in flax, oat flour, sautéed vegetables, cooked quinoa, salt, and seasonings. Mix all ingredients together. Texture should be wet and slightly sticky, but not too sticky to be able to make the patties. Add more oat flour if needed.

  6. Fill a 1 cup measuring cup to 3/4 full with the burger filling, and make a patty with your hands. Make the patty thicker to start and once you cook it in the plan you can flatten it out with a spatula.  
  7. Allow the burgers to sit in the fridge for 1 hour before cooking.
  8. Cook all or Freeze some and cook at a later date. 
  9. On the flat electric pan or in a pan heat oil on LOW to MEDIUM heat – sear black bean patties for 4 minutes on each side or until burgers are cooked through and brown on each side.

Sweet N Spicy Rosemary Nuts

No need to buy any more store bough sweet nut medleys or trail mix. Once you try this sweet and spicy combo you will be hooked and this will become a kitchen staple. Guests on retreat at Farm of Life absolutely loved taking this snack on waterfall hikes! Everything homemade, truly is better! This is a great way to enjoy healthy fats found in nuts and seeds as well as coconut oil! No need to follow the recipe exactly, just use the nuts and seeds you have in your pantry!

Makes 16 snack size servings

Ingredients:

2 cups peanuts

1.5 cup mixed nuts of choice (pecans, walnuts, whole almonds, cashews)

sweet and spicy coating

1/3 cup virgin coconut oil (optional)

1/3 cup dried cranberries or raisins

5 sprigs fresh rosemary or approximately 3 tbsp, finely chopped

1 tsp cayenne or more if you like it spicy!

1 tsp Himalayan pink salt

1.5 tsp pepper

1/4 cup honey, agave, maple syrup or sweetener of choice

Method:

In a pan, dry roast (no oil) all nuts on medium heat for 3- 5 minutes, stirring frequently with a wooden spoon to avoid burning.

Place nuts aside in a bowl.

Return pan to heat, and add coconut oil. Once melted, stir in rosemary, cranberries, cayenne pepper, salt, pepper. Turn off heat and add in honey. If not using oil, simply mix above ingredients into the bowl with the nuts.

Add pan mixture into the nut bowl and mix until well combined.

Place nuts on a lined baking sheet and place in the fridge for 2 hours. Store in a glass container in the fridge.

Enjoy as a nutrient dense power snack, topped on salad or a creamy savoury soup, or even with breakfast on your morning oats….

Last year, I had the honour of being a part of the Dare 2 Dream Sandy Loam Produce first ever Community Support Agriculture (CSA) program in Espanola, Ontario. On a weekly basis, CSA members as well as those of you signed up for the Holistic Lacey newsletter received a flyer filled with delicious recipes, tips and nutritional facts. I have decided to share this deliciousness to inspire, educate and encourage everyone to enjoy eating locally and seasonally, and to feel the difference for yourself.

Week 2: Lovely Leafy Greens GET THE RECIPE + WAYS TO USE LEAFY GREENS

Keep it simple! One of my favourite ways to enjoy leafy greens is steamed or sautéed and topped with olive oil, lemon juice, sea salt, pepper and cayenne or turmeric.

Raw Superfood Demo at Shanti Retreat

This weekend, I offered a raw  superfood demo at Shanti Retreat as well as a conscious cooking workshop. My intention was to educate and inspire people to include more whole foods in the diet and to increase the amount of raw, enzyme rich foods and supplements.

Here are some highlights and recipes from the demo!

Raw Soaked Muesli with goji berries

Directions:

Combine any amounts of the following ingredients (according to preferences and what’s in your pantry!) and soak overnight with double the amount of liquid, either almond, coconut or soy milk. In the morning, add fresh berries and sliced bananas and more milk if needed.

Rolled Oats

Chia Seeds

Pumpkin or sunflower seeds

Almonds

Dried Fruit (goji berries, dates, cranberries, raisins, figs, apricots)

cinnamon

vanilla

sea salt

maple syrup

almond, coconut or soy milk

My favorite superfoods and their benefits

Raw Cacao (powder, nibs, beans): high in magnesium, minerals, iron and antioxidants

Sea Veggies (spirulina, chlorella, kelp, algea, E3live): increases energy, complete protein, reduces stress, alkalizing, anti-aging, full of vitamins and minerals, detoxifies, improves mental clarity.

Maca: increases vitality and energy, balances endocrine system and hormones, minerals, vitamins, antioxidants

Carob: source of calcium, fiber and vitamin D

Leafy Greens: fibre, chlorophyll, vitamins, minerals

Parsley: alkalizing high in vitamin K and C

Hemp Seeds: complete protein, omega fatty acids, minerals
