It was a mini adventure getting there, but the class was definitely worth it! (I think all adventures feel that way). I  left my hostel and began walking -uphill, and in the wrong direction – for about 10 minutes, away from the beach. (Yes I know, not smart thinking for a class advertised as “beachfront yoga.”)

Once I got to the top of about 3 steep hills and realized this, I turned around and got going in the right direction. I passed through Montezuma, and found myself on a narrow dirt road, toward playa grande, which quickly turned into a path that came out onto the white sandy beach. 

So here I am, standing on the most beautiful beach I’ve seen, and at the same time pretty much running to yoga- again not the most ideal situation. I continue walking along the beach thinking maybe I’d see some yogis in downward dog, but not to my luck. At this point I figured I was lost, late and was ok with spending my morning walking oceanside. 

It was at that moment that I came across the hotel (apparently you can’t drive there and actually have to walk the beach to arrive).  Welcomed by the beautiful gardens, I made my way up to the yoga hall. 

  

The space is on the 2nd floor above the restaurant overlooking the ocean and the beach. It’s all made of wood and decorated in a chakra theme. The open window walls allow you to gaze out beyond the tops of the palm trees as far as the eye can see. 

  

Yes, I wasn’t that late… Thank you Costa Rica time! Pura vida! Ximena, the instructor, greeted me with a warm welcome and began the class with a grounding initial relaxation. 

This is exactly what I needed- it allowed me to slow down, let go of the morning rush and even stop sweating! She focused on deep abdominal breathing, filling the entire body with oxygen and letting go. We inhaled for 4 counts and exhaled for 8. This technique of slowing down the exhale truly calmed the nervous system and mind almost immediately. She invited us to breathe into our entire body and accept it the way it is- perfect. 

With each couple of breaths, we focused on our different bodies, moving from the physical, to mental, emotional and spiritual. For me, it was the perfect start and I knew immediately that I would take more than the physical benefits from the class.

Next, we focussed on some gentle warming exercises to stretch the neck, shoulders, wrists, spine and rib cage. It was ideal for anyone who had been traveling or for those on a relaxing vacation away from their busy lives.  

We continued to warm the body with the practice of some classic sun salutations, always with a focus on the breath- especially the exhale.

She reminded us the benefits of inversions and the calming and restorative power of downward dog.

 

  I loved the slower pace of the flowing sequence which really allowed you to keep focus on breath and to stretch into hips and back, all while strengthening with warriors and plank pose.

  

The next portion included a variety of classical asanas: twists, forward folds, balance poses. Throughout the postures, Ximena had a natural way of sharing yogic teachings about staying present, being still and also on the energy of the chakras. She also played some soft music in the background: a mix between flute and mantras. It was a nice touch, and I was happy it wasn’t overpowering the sound of the majestic waves.

I loved gazing out during tree pose as I saw a giant iguana crawling down a palm tree followed by a group of 6 pelicans flying by over the water. We were even graced by some horseback riders passing by. It all made me smile.

The practice was a graceful balance between ease and effort. As a yoga instructor myself, I really felt inspired by Ximena in the way that she presented the class and made it accessible for all levels. Her sweet and playful energy was also a blessing.

The class ended with a brief meditation where she chanted a beautiful mantra before we reclined back for savasana.

  

I felt so much gratitude (well for -actually finding it and making it to class) for the gift to practice above the beach, looking out to mother ocean. I often like to close my eyes when I practice, but I was feeling guided to gaze softly outward. I learned so much in that 90 minutes while watching the waves with so much awareness. I most vividly remember noticing the yin and yang between graceful rolling waves and the powerful crashing  break. It reminded me that our lives are just that, moments where we are flowing with ease and grace, followed by moments of crashing stress or devastation. What I also understood is that we need to honor our softness just as much as our power- we need both, a blend of the heart chakra with Manipura, our inner fire.

  

We think that we need to take an adventure to paradise, in the middle of no where, on a beach… To experience bliss. Don’t get me wrong I am forever grateful for the class and the opportunity to be a student. However,  I truly know that every moment is filled with beauty, wonderment and stillness, I just need to take the time to pause, recognize and remember.

  

Afterward, you can enjoy the same view down at the restaurant and treat yourself to a delicious shake with superfood spirulina! I indulged inan iced chai tea latte sin azucar.

Delicious whole grain bread (it’s steamed!) {gluten-free}

It is so important for me to know exactly what’s in my food. I have began to make as much as I can from scratch… including bread. Although I love my grandmas homemade bread recipe,  I could see this being more of a staple in my kitchen. If you like to make home made bread, I suggest giving this one a try. It is made with gluten free whole grains , brown rice and rolled oats. It is not grain free, but if you like, check out my paleo bread recipe. I had never even heard about steaming bread before this recipe, but I must admit it was delicious and so moist. I’m sure you could play around with flavors adding either fresh herbs for a more savory taste, or seeds and dried fruit for a sweeter breakfast bread.  I definitely recommend a bamboo basket steamer for this recipe!

 

Steamed Gluten Free Bread

Makes 1 loaf

1.5 cups cooked squash (or sweet potato)
1.5 cups brown rice flour (best to make your own by grinding brown rice in a vitamix)
1 cup oat flour (purchased, or again, make your own from rolled oats)
1/4 cup ground flax
3 t baking powder
1 t baking soda
2.5 t salt
2.5 t active yeast
3/4 cup warm water
2 T honey or maple syrup
1/4 cup coconut oil or olive oil for coating bread
Cube squash and boil until tender.
Meanwhile, grind brown rice and oats to make a flour.
Combine flours, flax, salt, baking powder and baking soda.
In a measuring cup, combine warm water, sugar and yeast and let is sit for 5 minutes or until it gets foamy.
Once squash is cooked, drain and pulse with honey in a food processor. Add yeast and water.
Add squash mixture to flour mixture and mix into a ball (best to use your hands here!) Oil hands to shape the bread into a big round ball.
Use a bamboo basket steamer for the next step and place over a pot of boiling water.
Place a piece of parchment paper in the bottom of the steamer and add bread dough.
*Preheat oven to 375*
Steam for 30 minutes. Remove bread from steamer, add more oil to the exterior and bake at 375 for 10-15 minutes or until the exterior gets firm.
Best enjoyed as fresh bread with a delicious soup!

Banana-Date muffins {gluten-free}

This is the first gluten free muffin I’ve made that I actually enjoyed. It had a nice crumbly lightness to it, without falling apart. It comes from an Ayurvedic cookbook filled with excellent recipes for balancing the 3 doshas: kapha, pitta, vata.

I made ghee for the first time this week, which also comes from Ayurveda and it taste sooo good with the muffin! I don’t eat muffins often but they are great for a quick snack!

Makes 12 muffins
4 large ripe bananas
1/2 cup sunflower seed oil (or substitute for coconut oil )
1/2 cup maple syrup
1 t nutmeg
1 tsp cinnamon
12 dates, 6 chopped +6 halved, set aside for topping the muffin
2 1/2 cups Bob’s red mill all purpose gluten free flour
2 1/2 t baking powder
1 t sea salt

Preheat oven to 350 degrees. Mash the bananas in a medium mixing bowl and stir in the oil and syrup. Mix in the spices and the dry ingredients. Spoon into well-oiled muffin tin. Top each muffin with half a date, sliced lengthwise, for decoration. Bake 25 minutes or until done. Enjoy warm with ghee, nut butter or your favorite jam

Sunflower Seed Paleo Bread

I absolutely love this bread recipe. It is quite simple to make, flourless, really tasty and so light! It is always exciting to find new bread recipes that work and actually resemble bread! I also enjoy flaxseed focaccia, or raw crackers,  but I am really loving this new recipe (created by Jamie at The Blissful Kitchen.)I know that some people following paleo do avoid flaxseed but I’ll call it paleo bread since that’s what her recipe is.

I like to use it for sandwiches like a vegan BLT with marinated eggplant bacon, tomatoes, lettuce, avocado and a red pepper cashew mayo, or a sweet breakfast sammy with PB and local honey!

It would be great as toast, served with soup or for any sandwich of choice!

Paleo Bread

2 cups sunflower seeds
1/4 cup ground flaxseed
2 T coconut flour
1/2 t baking soda
1/4 t salt
5 large eggs, preferably organic and local
1 T extra virgin cold pressed coconut oil, melted
1 T honey
1 T apple cider vinegar, I like Bragg’s raw unfiltered

Preheat oven to 350.

In a food processor, pulse together sunflower seeds, coconut flour, baking soda, and salt. Add eggs, oil, honey, apple cider vinegar until well combined. Pulse in ground flax.

Prepare a loaf pan with parchment paper to prevent the bread from sticking. Place batter in loaf pan and bake for 35-40 minutes.

Let cool for 1 hour before removing from pan or slicing.

Makes 1 loaf

Creamy Sunflower Seed Dip

I absolutely love this dip for so many reasons. It’s so easy since all you have to do is throw all the ingredients into a food processor. The dip is so creamy and makes you feel as though you are indulging in your favorite ranch and cream cheese dip..minus the dairy.

This dip is raw so it contains all the enzymes needed for digestion. It’s an easy way to include more raw food into the diet and to switch up the hummus dip typically served with veggies.

I love to eat this dip with flaxseed Foccacia, a recipe and new favorite I learned about from Healthful Pursuit’s “The Keto Beginning.”

Why was this dip included in the detox?

Raw sunflower seeds are a rich source of Vitamin E, an antioxidant that helps the body fight off oxidative stress and free radicals. They also contain tryptophan, an enzyme that produces serotonin and relieves tension and promotes relaxation.

It contains fresh lemon juice which is very important when it comes to detoxing and alkalizing the body, and so are fresh herbs (especially parsley!)

Garlic is an important anti-bacterial which helps to strengthen the immune system, fight off infection as well as delivers important minerals like selenium and manganese…among many other health benefits.

Creamy Sunflower Seed Dip

Makes 2 cups

1 1/2 C raw sunflower seeds (soaked for at least 3 hours)

1/2 lemon, juiced

3/4 C water

1 tbsp fresh dill

1/3 C fresh basil mint

1/3 C fresh parsley

1 green onion (for garnish)

1 garlic clove

1/2 tsp sea salt

1/4 tsp ground pepper

1/4 C cold pressed olive oil

INSTRUCTIONS : Put all ingredients except the olive oil in a vitamix or high powered blender.

Once the blender is running drizzle the olive oil through the opening in the lid and process until smooth. You may need to stop the blender to scrape down some of the sunflower seeds from the sides. Do that and then just run the blender for another few seconds. Refrigerate the dip for 1 to 2 hours before serving.

Lacey’s 10 tips for daily detox

1. Start each day with a glass of warm water and the juice of half a lemon to stimulate the gallbladder, liver and the digestive system..hello regularity! Add  a pinch of cayenne if you wanna live on the edge!

2. Drink a minimum of 2 litres of purified water daily to promote detox and hydration. To make the water more alkalzing (and delicious), add fresh herbs like basil and mint as well as fruit like orange slices, lemon or berries.

3. Re-create your morning routine to include cleansing exercises (kriyas) such as oil pulling, tongue scraping, netti pot and eye cleansing.

“Eyes are the most used organs of our body. We perceive our world with our eyes, and they also are the most over-used from being locked into our laptops to our cell phone to TV screens. The eyes then, lack energy and release heat, crying for relief, and cooling. Eye cleansing process cleanses the eyes by removing external dust particle, body heat and secretions of the eyes that come in the way of normal movement of the eye lid helps that irritate the eyes. This process helps in having clear vision, reduces itching, eye strain and burning eyes. It cools the eyes and keeps fresh. Most essentially, it cools the body very powerful, energizing the eyes and improve the vision. It even reduces under eye bags.

4. Practice dry brushing before you take a shower to stimulate the lymphatic system and cleanse the skin (the body’s largest detoxification organ). Once you’re in the shower, alternate between hot and cold water to improve circulation. Always end with cool water.

5. Exercise, sweat and spend time in nature! This will not only help the body detox but also improves overall mood and well being.

6. Incorporate proper digestion techniques like food combining, drinking liquids in between meals, eating when calm, and chewing slowly!

7. Eat local and seasonally to maximize nutrients and choose organic to reduce intake of toxins and chemicals.

8. Eat more raw foods, green foods and juices! These foods are nutrient dense, alkalizing (PH balancing) and contain all the enzymes needed for digestion. Enjoy 1 raw meal per day or work toward 50% raw at each meal.

9. Re-balance your gut health for overall immunity. Take digestive enzymes which include amylase, protease, cellulase and lipase to improve digestion and absorption as well as a probiotic supplement (10 billion minimum). Include fermented foods like kimchi, saurkraut, kefir and kombucha.

10. Meditate! Sit down every single day even if it’s for 5 minutes. Sit tall and comfortable with eyes gently closed; bring your awareness to your breath. Count the breath to help with concentration. As thoughts arise, simply recognize them without labeling or judging and come back to your breath. Cleansing the mental body is key in promoting longevity and reducing stress.

Start slowly and create a new routine. Even if you add one of these each day, it is a step forward toward cleansing your mind and body.

Date Coconut Cookies: all natural & free of refined sugars and oils

Tis the Season! Baking can be fun when you have the time and can also be nutritious when using natural ingredients. These cookies are made from scratch, delicious and will definitely please any crowd.

The recipe is from a cookbook that I designed in 2013 for Shanti Retreat. All the desserts in Shanti at Home use organic whole grain flour, natural sweeteners and coconut oil. They are all dairy-free and mostly gluten free (or offer a gf alternative).

I love to make jumbo thick ones so it only made 15, but I am sure you would get more if they were smaller. I used a 1/4 measuring cup to form the cookies before placing them on the baking tray.

Date Coconut Cookies:

Ingredients

2.5 cups light spelt flour (or buckwheat for gf)

2 cups rolled oats

1.5 tsp baking soda

1 tsp of cinnamon (i used a bit more because I love cinnamon)

1 tsp sea salt

1 cup dates, chopped

1 cup coconut, unsweetened shredded or flaked

1 cup maple syrup (I tried to use 1/2 cup to start, but the cookies wouldn’t stick together so I added another 1/2 cup…I will experiment with maybe apple sauce)

3/4 cup coconut oil

1 tsp vanilla

zest of 1 orange (not optional…this makes the cookie!)

Instructions

Preheat oven to 350 degrees F. Prepare baking sheet with parchment paper or a light coating of oil.

In a large bowl, whisk together flour, oats, baking soda, cinnamon and salt.

Add dates and coconut and stir to combine.

Add syrup, coconut oil, vanilla and zesst and mix until flour is just absorbed.

Scoop a tablespoon of dough (or in my case 1.4 cup!)  onto a baking sheet, spacing them 2″ apart.

Bake for 12 minutes or until golden brown.

Low carb- high fat- moderate protein shake

The Keto Beginning is inspiring me to get creative with shakes! This is my first shake without fruit (other than some random water and protein powder combos). Before the keto beginning I could never imagine a shake without a banana let alone berries or pineapple. This high fat approach was the perfect the after work-out boost and refuel I needed. My body is loving working toward being keto adapted. It tastes like cookies and cream for some strange reason even though there was no cacao. Here are the all star ingredients. 1 tbsp coconut oil 1 scoop vega sport performance vanilla 1/3 cup coconut milk 1 tbsp natural peanut butter 1 tbsp chia seeds Water Enjoy!

Immunity shake with my newest superfood

This shake was delicious and so nutrient dense, perfect for boosting the immune system, especially this time of year. I’m always pleasantly surprised when I throw a bunch of randomness into a blender and it comes out amazing!

I’ve just began to experiment with bee pollen as a new superfood in my diet. Bee pollen is rich in protein, vitamins, minerals and enzymes which aid digestion and boost immunity and energy levels. Bee pollen also benefits the cardiovascular and reproductive systems.

With a citrus juicer, juice 1 grapefruit, 1 orange and 3 clementines.

Add the juice to a high speed blender with the following ingredients.

2 inch piece ginger root
2 inch piece turmeric root
2 cloves garlic
1 banana
1/2 scoop protein power
1 tbsp coconut oil
1 tsp sea veggies
1 tbsp bee pollen
A few pieces of frozen pineapple and some ice cubes
Splash of coconut water
Large Handful of spinach
